Ingredients:
- 1 cup vermicelli
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/2 cup mixed vegetables (carrots, beans, peas)
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tbsp chana dal
- 1 tbsp urad dal
- 1 sprig curry leaves
- 2-3 green chillies, slit
- 1/4 tsp turmeric powder
- 2 cups water
- Salt to taste
- 2 tbsp oil
Instructions:
- Heat a pan and add the vermicelli to it. Roast the vermicelli until it turns golden brown. Remove the roasted vermicelli from the pan and set it aside.
- In the same pan, heat the oil and add the mustard seeds, cumin seeds, chana dal, and urad dal. Fry them until the mustard seeds start to splutter.
- Add the chopped onions, green chillies, and curry leaves to the pan. Fry them until the onions turn translucent.
- Add the mixed vegetables, turmeric powder, and salt to the pan. Fry them for a few minutes until the vegetables are cooked.
- Add the roasted vermicelli to the pan and mix well. Add 2 cups of water and mix again.
- Cover the pan and let the mixture cook for 5-7 minutes until the vermicelli is cooked and the water is absorbed.
- Garnish with coriander leaves and serve hot.
Tips:
- To make the dish spicier, add more green chillies.
- You can use any vegetables of your choice in the dish.
- Do not overcook the vermicelli, or it will become mushy.
